This is your friendly reminder that eating healthy doesn’t have to be boring, especially for salads!
This salad is definitely going to be a staple for the summertime. It’s bright, tangy, and a bit umami. It’s PERFECT
Ingredients: (Serving Size 4)
4 cups romaine lettuce (you can use iceberg)
1/2 cup red cabbage
1/2 cup cucumbers
1/2 cup carrots
one can of 11oz mandarin oranges
1/3 cup green onion
1/3 cup cilantro
1/4 cup sliced unsalted almonds (unsalted dry toasted)
2 cups cooked chicken breast
Instructions:
Wash one pound of chicken. I use white vinegar and water to wash my chicken. Rinse well. I cooked my chicken in avocado oil and seasoned with garlic powder, onion powder, salt and pepper. I kept it very simple because I don’t want the chicken to overpower the flavor of the dressing and overall salad. Once chicken is cooked, set a side to cut into pieces. Let chicken fully cool before adding to salad. In a large bowl, add romaine lettuce, red cabbage, cucumbers, carrots, canned mandarins, green onion, cilantro, and unsalted sliced almonds. Then pour in dressing. If you think you’re going to have leftovers, don’t pour dressing over the entire salad so the salad doesn’t get soggy in the fridge.
